Healthier Shrimp Scampi



Hope you guys are having a great friday!!!!! I have really been craving shrimp scampi but I hate how unhealthy it is. So I came up with a recipe to make it healthier. I replaced butter with smart balance which, in general, is about 1/2 the calories of regular butter and has no cholesterol (just be careful it does contain a lot of sodium). To reduce the cholesterol even more replace the shrimp with white fish, beans, or tofu; basically substitute it with a different protein. To make it even healthier substitute pasta with whole wheat pasta. Ok here we go!!!

Stuff I used:



- 2 TBSP Lemon Juice (to taste)
- 1 tsp Black Pepper
- Shredded Cheese (added at the end to taste)
- 2 TBSP Butter (used Smart Balance) (to taste)
- 1 TBSP Extra Virgin Olive Oil (to taste)
- 10 Shrimps (I used cooked, frozen to save time)
- Pasta
- 1/2 Bunch of Parsley, chopped
- 5 cloves Garlic, chopped
- 1/2 cup White Wine
- 5 Cherry Tomatoes, sliced in 1/2 or 1/4
- 1/2 White Onion, chopped
- 1 Bunch Asparagus, cut into bite size pieces

Let's get cooking ...
  1. Add olive oil to pan over medium-low heat
  2. Add onions & garlic & let cook until soft (careful not to burn it - I usually put a lid on it)
  3. Add everything but the tomatoes, parsley, & cheese
  4. Cook with lid on until shrimp is fully cooked and asparagus is soft
  5. In the meantime, cook the pasta
  6. Add tomatoes & parsley & let cook another 5 min. 
  7. Add the pasta & mix
  8. Sprinkle cheese & red pepper (to taste)
ENJOY!

I served my stuffed artichokes (click here for the yummy recipe!!) with this & a glass of wine. It's a delicious meal that keeps you thin & your wallet fat.

Sephora by OPI: The Golden Age

Hey guys!!! Hope ur having a wonderful Monday!! I know I haven't posted much lately but I've been a little busy catching up with school stuff (got a 94 on my test last thursday!!!). I have a paper and another test this week but then hopefully I should be caught up because I have so much I want to post! Anyway, I just got the nail polish Sephora by OPI The Golden Age today in the mail (click here to see what else I got from Sephora) & I was super excited to try it!!


What I used:
How I applied it:
  • 1 coat of Orly's Rubberized Base Coat
  • 2 coats of Essie's Bobbing for Baubles
  • 1 thin coat of Sephora by OPI's the Golden Age
  • Top coat of Essie's Good to Go
I did a review of Essie's Bobbing for Baubles back in 2011 but here's an update or just restatement - I LOVE IT!!! It's the nicest dark blue I own & doesn't chip quickly; I also have Dior's tuxedo (I'll do a review on it one day) but I still like this color & formula better.

  • Description from Sephora Website: "clear with chunky & fine gold/silver glitter"
  • Love:
    • the color
    • easy to apply
    • there is a lot of glitter with just 1 coat
    • smooth finish (don't feel the glitter pieces when it dries)
  • Dislike:
    • there is a lot of glitter with just 1 coat (i love & dislike it, I wish there was just a little less)
  • Would I Repurchase?
    • No probably not but I may change my mind, I'm neither here nor there on it yet.
    • Although i really like the concept of it I wish there was not so much glitter that applied with just 1 coat although it's still better than having a glitter polish that doesn't apply any.

Sephora Haul 3.4.2013

Hey guys! I ordered a couple things from Sephora the other day & just got them in the mail today so I wanted to share them with u!


I needed new face wash & lotion & I heard good things about "Fresh" products so I decided to try them. My skin is really sensitive & prone to breakouts so it's always a risk. I'll do a review on this after I try it for a while. I have the polish on in the photo (click here to see more info).

These were just the samples I chose with the order. I LOVE Bumble & Bumble products so I'm sure this is amazing. I've never tried Soap & Glory but I thought I heard a while ago that the person that started this company was originally from Bliss & I LOVE their products. The Cartier & Balenciaga perfumes smell AMAZING!!!
