Healthier Shrimp Scampi



Hope you guys are having a great friday!!!!! I have really been craving shrimp scampi but I hate how unhealthy it is. So I came up with a recipe to make it healthier. I replaced butter with smart balance which, in general, is about 1/2 the calories of regular butter and has no cholesterol (just be careful it does contain a lot of sodium). To reduce the cholesterol even more replace the shrimp with white fish, beans, or tofu; basically substitute it with a different protein. To make it even healthier substitute pasta with whole wheat pasta. Ok here we go!!!

Stuff I used:



- 2 TBSP Lemon Juice (to taste)
- 1 tsp Black Pepper
- Shredded Cheese (added at the end to taste)
- 2 TBSP Butter (used Smart Balance) (to taste)
- 1 TBSP Extra Virgin Olive Oil (to taste)
- 10 Shrimps (I used cooked, frozen to save time)
- Pasta
- 1/2 Bunch of Parsley, chopped
- 5 cloves Garlic, chopped
- 1/2 cup White Wine
- 5 Cherry Tomatoes, sliced in 1/2 or 1/4
- 1/2 White Onion, chopped
- 1 Bunch Asparagus, cut into bite size pieces

Let's get cooking ...
  1. Add olive oil to pan over medium-low heat
  2. Add onions & garlic & let cook until soft (careful not to burn it - I usually put a lid on it)
  3. Add everything but the tomatoes, parsley, & cheese
  4. Cook with lid on until shrimp is fully cooked and asparagus is soft
  5. In the meantime, cook the pasta
  6. Add tomatoes & parsley & let cook another 5 min. 
  7. Add the pasta & mix
  8. Sprinkle cheese & red pepper (to taste)
ENJOY!

I served my stuffed artichokes (click here for the yummy recipe!!) with this & a glass of wine. It's a delicious meal that keeps you thin & your wallet fat.
